Slice 700g of red potatoes into small cubes; spread foil onto baking sheet and lay out potatoes on foil on top of baking sheet; spray with cooking oil, sprinkle with salt, pepper and garlic powder; bake in oven for 25-30 minutes at 400 degrees
Cut up red pepper and onion and cook them in skillet; once they are nice and sauteed, add ground beef to skillet and add remaining seasonings in the ingredients
Add greek yogurt, avocado, chipotle pepper, adobo sauce, juice from 1/2 a lime and salt and pepper to taste to a food processor and blend until smooth - then add 1 tbsp of honey
Add cooked potatoes to bowl, add meat blend and then grate some fresh cheddar to top it
