A refreshing and healthy cucumber roll filled with chicken salad.

Slice your cucumber super thin (like with a potato peeler) and pat it dry with a paper towel.
Spread cream cheese on the bottom half.
Blend up your sauce (fat free cottage cheese, light mayo, juice from 1/2 a lemon, pinch of cilantro or parsley) and mix it in with shredded chicken and onion.
Add it on top of the cream cheese on your cucumber.
Roll, slice, enjoy!
