Chicken Salad Cucumber Roll
Ingredients
  • 1 whole medium cucumber
  • 20 g light cream cheese
  • 65 g shredded chicken breast (shredded)
  • 20 g diced onion
  • 110 g fat free cottage cheese
  • 15 ml light mayo
  • 1/2 whole lemon (juice)
  • 1 pinch cilantro or parsley
Instructions

    Slice your cucumber super thin (like with a potato peeler) and pat it dry with a paper towel.

    Spread cream cheese on the bottom half.

  3. 3

    Blend up your sauce (fat free cottage cheese, light mayo, juice from 1/2 a lemon, pinch of cilantro or parsley) and mix it in with shredded chicken and onion.

    Add it on top of the cream cheese on your cucumber.

    Roll, slice, enjoy!
