A homemade version of Panera's broccoli cheddar soup.

Melt butter/heat oil in a large pot over medium heat. Add onions, carrots, and broccoli; cook to soften ~5 minutes.
Sprinkle with flour and add salt and pepper, then add milk and chicken stock. Remove pot from heat to add yogurt- blend really well before putting back over medium low/low (to prevent curdling).
Stir often until thickened (10-15 minutes) and heated through.
Once thick, add cheese and stir until melted.
