High-Protein Mediterranean Chicken Salad
Ingredients
  • 230 g cooked chicken breast, shredded or chopped
  • 1/2 cup ½ cup plain nonfat Greek yogurt
  • 10 whole cherry tomatoes, halved
  • 2 whole mini cucumbers, sliced
  • 2 oz feta cheese
  • Salt to taste
  • 1 splash Optional: splash of lemon juice or red wine vinegar
  • Pepper to taste
  • Garlic Powder to taste
Instructions

    Mix Greek yogurt, chicken, and seasonings in a bowl.

    Add chopped tomatoes, cucumbers, and crumbled feta.

    Toss everything together until coated.

    Serve immediately or chill for later!
