La Scala Chopped Salad
Ingredients
  • 1 whole head of iceberg lettuce (shredded)
  • 1 cup sliced salami
  • 1 can chickpeas
  • 1 cup mozzarella
  • 1 whole red onion
  • 1/4 cup red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 2 tsp dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 cup parmesan cheese
Instructions

    Put shredded lettuce into a large bowl, add thinly sliced salami, rinse and drain chickpeas and then add those to bowl. Add cheese and sliced red onion.

    Add red wine vinegar to a jar, then add extra virgin olive oil, dijon mustard, salt, black pepper and parmesan cheese...mix/shake

    Add dressing mixture to salad bowl and mix everything together
