Taco Beef and Rice Bowl
Ingredients
  • 1/2 lb 90% lean ground beef
  • 1/2 pack Taco seasoning (1/2 pack)
  • 1/2 cup water
  • 1 splash Cooking oil spray
  • 1 pack microwaveable cilantro lime rice (follow package instructions)
  • 1/2 whole avocado, sliced
  • 1/4 cup Greek yogurt
  • Hot sauce to taste (your favorite)
  • Fresh cilantro, chopped to taste
Instructions

    Cook the Beef: Spray a pan with a bit of oil and heat on high. Place the ground beef in the pan as a patty, searing until golden on one side. Flip, break up into smaller chunks, and cook until about 80% done.

    Add Taco Seasoning: Stir in the taco seasoning and water. Let simmer until the liquid thickens, giving the beef that saucy, spiced flavor.

    Prepare the Rice: Microwave the cilantro lime rice according to package instructions. (or prepare the rice however required based on whatever kind of rice you are using)

    Assemble: Spoon the rice into a bowl, top with the taco-seasoned beef, then add avocado slices, a dollop of Greek yogurt, and your favorite hot sauce.

    Garnish: Finish with fresh cilantro
