Blend cottage cheese to smooth texture
Finely chop parsley and onion
Chop up hard boiled eggs and add to bowl; then add blended cottage cheese; then add chopped onion and parsley; then add dijon mustard; then add some salt and pepper and any other seasonings you prefer; stir until all blended together; enjoy!
