Combine your ground turkey and spices well. Roll into 1 oz meatballs & air fry at 375°F for 10 minutes, flipping halfway through. (Or pan-fry/bake!)
For your pita, mix flour, yogurt, and salt. Knead on a floured surface, split dough in half (or fourths), and roll into circles. Cook on a hot pan 3 min per side or until golden brown.
For tzatziki, mix yogurt, cucumber, dill, lemon juice, and salt until combined.
Assemble your gyro: pita + shredded lettuce + tomato + meatballs + tzatziki (plus feta if you’d like!) and enjoy!
