Blend cottage cheese, eggs, milk, syrup, protein powder, 1 tsp cinnamon, vanilla extract until smooth.
Cut the bread into thirds to create sticks. Dip each stick into the mixture and coat both sides.
Cook the dipped sticks on a skillet over medium heat until golden brown on each side.
While toast cooks, mix cream cheese, Greek yogurt, and powdered sugar until smooth to make the topping.
Mix 2 tsp of cinnamon and zero-cal sugar for cinnamon dusting; dip cooked french toast sticks in mixture
Plate the French toast and top with cream cheese icing.
